If you still have the T-5 behind the 351W then leave your combo alone as you will build more than enough torque to wreck the tranny. Tune on it and get it running smooth. I had an 830 cfm carb on a 302 so your 750 will work just fine if its what you have to work with. Change the plugs though as that is cheap and the autolites are much better.
I do agree that a person can get a lot more out of a 351W with different heads, cam, etc. but that all costs money and maybe the whole intent here was to use what was at hand and keep the costs down. If that is the case then suggestions on how to tune the current combo would make more sense. Stuff like cam timing, jetting the carb, etc.
